Tasty risotto with Nonno Nanni Stracchino and red radicchio

400 g rice
250 g Nonno Nanni Stracchino
1 Treviso red radicchio
White wine
Oil
Salt

Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Method
Start preparing the rice. Heat a saucepan with little oil and add rice in order to brown it a bit. When it is "browned" add a little white wine and let it gain flavor a few minutes. Add broth gradually to make it cooking. Meanwhile wash the red radicchio and cut into strips. Put it in a non-stick pan with a little oil and let it cook. Once the rice is cooked, add red radicchio and Stracchino. Serve piping hot.
