Tartlets with Robiola and Serrano ham
Nonno Nanni Robiola
75 g walnuts
200 g all-purpose flour
1 egg yolk
8 tbsps extra-virgin olive oil
Pinch of salt
1/2 glass of water (approx.)

Nonno Nanni Robiola is a fresh cheese that is extremely easy to spread and has an intense, pleasant taste.
Method
Pour the flour into a large bowl and add the finely chopped walnuts and salt. Stir and add the oil, egg yolk and water. Knead well until dough is smooth and homogeneous. Cover with plastic wrap and leave to stand in the refrigerator for at least 30 minutes. Meanwhile, prepare the filling by chopping the chives and mixing them with the robiola. Once the pastry is ready, roll it out trying to make it as thin as possible. With a glass, cut circles out of the dough and place in a baking dish for tartlets greased with oil. Pierce holes in the bottom of the tartlets using a fork. Bake for about 15 minutes at 200 °C or until golden brown. Now wait for the tartlets to cool down and fill them with the robiola and Serrano ham. Enjoy your meal!
