Stuffed Nonno Nanni Mini Tomatoes
Ingredients for 4 persons
12 mini San Marzano tomatoes with attached stem
60 g Nonno Nanni cheese
½ avocado
½ lime
½ non-treated lemon
6 Kalamata olives
some blades of chives
salt and pepper
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Method
Wash tomatoes and dry them. Cut a slice lengthwise and gently remove seeds with a corer. While performing such operations, make sure stem is not torn off: it will be used as a decoration and to pick the tiny pieces. Peel avocado, turn pulp into cubes and beat it with a pinch of salt and lime juice. Mix cheese with grated lemon rind, a pinch of salt and plenty ground pepper. Arrange cream cheese inside tomatoes and then add the avocado one. Stone olives, cut pulp into cubes and spread on top stuffed tomatoes. Complete with some chives cut into small pieces and then serve.
