Strawberry tiramisu with Nonno Nanni Mascarpone
500 g of strawberries
200 g of Nonno Nanni Mascarpone
1 lemon
1 tablespoon of sugar
200 g of ladyfingers
3 medium eggs
60 g of sugar
White chocolate chip
Nonno Nanni Mascarpone is a cheese with an unmistakeably velvety, creamy consistency.
Method
Remove the green part from strawberries and wash well. Cut into cubes but not too small and place them in a bowl with the juice of one lemon (be careful when removing seeds) together with a tablespoon of sugar. Stir everything up, cover with plastic wrap and put inside a fridge.
Separate egg yolks from whites. Mount egg yolks with half of the remaining sugar using an electric mixer, then combine Nonno Nanni Mascarpone, stir with a wooden spoon and then use the electric mixer again.
Mount egg whites (make sure you clean beater before using them for egg whites), when they start to thicken, add the remaining sugar and continue to use the electric mixer until the white gets really hard. Merge both creams, while stirring with a wooden spoon from the bottom up, so that the cream does not become watery.
Separate and drain the strawberries from the juice obtained at the bottom of the bowl, in which you will dip each biscuit on both of its sides.
Arrange soaked biscuits on a baking tray, then smear a layer of Nonno Nanni Mascarpone cream, add a few flakes of white chocolate, some strawberries and continue by alternating layers until reaching strawberry layer.
Store inside a refrigerator for at least 2 hours and serve cold.
