Rice cake with Nonno Nanni Stracchino

Ingredients for 4 persons

400 g of rice
50 g of grated parmesan cheese
200 g of Nonno Nanni Stracchino
70 g of butter
1 small onion
1 lt. and 1/2 of broth salt to taste

Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour

Method

Brown the chopped onion with butter in a saucepan, add rice and let it toast for a few minutes. Let it cook by constantly stirring with a wooden spoon and add broth little by little. Season with salt, and whip by adding Parmesan and a knob of butter. Butter an oven mold, pour half the rice, add small pieces of Nonno Nanni Stracchino and cover with the rest of the risotto. Level the surface and complete by scattering little butter flakes. Bake at 180° for 15 min. and serve hot.
