Potato and Stracchino flan
Ingredients for 4 persons
1 egg
2 tablespoons of breadcrumbs
A sprinkling of grated cheese
5 medium sized potatoes
200 g Nonno Nanni Stracchino con fermento Probiotico
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Method
Boil the potatoes and peel when they are still hot.
In a bowl combine the egg, cheese and stir so that the cheese is well mixed. Add the potatoes and create a puree by crushing them with a fork.
Line a baking sheet with parchment paper and pour the mixture. Sprinkle with breadcrumbs and grated cheese. Bake at 200 degrees for 30 minutes. Remove from the oven when golden brown.
