Pastry Baskets with Lactose Free Robiola, Raspberries and Pistachios
1 package Nonno Nanni Robiola
2 tablespoons sugar
grated lemon zest
fresh raspberries
chopped pistachios
For the pastry:
150 g “2” flour
80 g cold butter
60 g sugar
1 egg
grated lemon zest
Nonno Nanni Robiola is a fresh cheese that is extremely easy to spread and has an intense, pleasant taste.
Method
Preheat the oven to 160°C
Prepare the pastry baskets:
Put the flour and butter in a bowl and blend vigorously until you have a grainy mixture. Add the sugar, egg and lemon zest and knead. Form the dough into a ball, cover with plastic wrap and let rest in the refrigerator for 30 minutes.
In the meantime, beat the cheese with the sugar and lemon zest. Gently wash and dry the raspberries.
Roll out the dough, place it in the moulds, pierce the bottom with a fork and fill with dried beans or chickpeas.
Bake the baskets for about 20 minutes. Take them out of the oven and let cool.
Put the cheese in a piping bag, fill the baskets with the cheese and decorate with raspberries and chopped pistachios.
