Mini cheesecakes

Ingredients for 4 persons

150 g digestive type biscuits
120 g light cane sugar
1 pack of Fresco Spalmabile Nonno Nanni
2 eggs
60 g soft butter
1 spoon of vanilla extract
15 cl of fresh cream
1 pack of raspberries
icing sugar

Nonno Nanni Fresco Spalmabile is a fresh, soft and spreadable cheese, with a lively but delicate flavour.

Method

Crumble the biscuits and mix with the softened butter. Prepare the bottom of the cheesecake; use silicone molds for a perfect result, otherwise other types of mods need butter and flour. Put a spoonful of the cookie in the mold, at least 1 cm high, and press with your fingers. With a whisk beat the eggs and sugar; add the cream, vanilla and Fresco Spalmabile Nonno Nanni. Preheat the oven to 150 degrees. Fill the molds for three quarters and bake for about 15 minutes. The mini cheesecakes are ready when they are beautiful puffy and golden. Let cool, gently remove from the molds, if you need pass a thin knife around the edges to disconnect them. Decorate with raspberries and powdered sugar. Delicious warm or cold, are a real treat for adults and children.
