Eggplant Sandwich
Stracchino with ferment
Nonno Nanni Probiotic – 100 g
Smoked ham – 150 g
00 type Italian Flour – 250 g
Tomato sauce – 30 g
Eggplants – 2
Vine tomato – 1
Cold sparkling water – 1/2 liter
Salt and oregano to taste
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour.
Method
Remove peel from eggplants, cut each slice about 2-cm high, sprinkle with salt and let them drip their water overnight inside a refrigerator. Prepare a batter by mixing sparkling water with flour added little by little; dip eggplant slices into it and fry in hot oil. Dry on absorbent paper and starting as a base from the eggplant, arrange a slice of tomato on top and make sure to flavor it to taste, Stracchino and ham. Close the sandwich with the eggplant, decorate it with tomato sauce and a sprinkle of oregano. Put inside oven at 200°C for a few minutes.
