Delicious small pieces of toast with Fior di Stracchino

Ingredients for 4 persons

8 slices of medium size homemade bread or wholemeal if preferred
1 package of Fior di Stracchino
pore mushrooms in oil
100 g of very thin speck
few leaves of fresh parsley for garnishing

Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour.

Method

Toast bread lightly and spread favola di latte cheese on a thick layer. Lay some really good well-drained pore mushrooms in oil on top. Lay slice of speck in the center of a serving dish and some small pieces of toasted around, garnish with some fresh parsley leaves.
