Courgette Parmesan Light with Nonno Nanni Stracchino with Yogurt
4 round courgettes
8 courgette flowers
1 250-g package Nonno Nanni Stracchino with Yogurt
grated parmesan
butter
olive oil
pepper to taste
A fresh, soft cheese with a unique flavour
Method
Preheat oven to 180°C. Cut the courgettes into round slices 3-4 mm thick. Roast them on a hot grill sprinkled with coarse salt. Wash and dry the courgette flowers, remove the pistils.
Butter 4 small ovenproof dishes or baking pan. Assemble the courgette towers: place the thicker slicers on the bottom of the dishes. Cover with a layer of stracchino, a teaspoon of grated parmesan, the courgette flowers petals, then continue with another courgette slice, stracchino, etc. until all the ingredients are used up. Finish the tower with a drizzle of olive oil, plenty of freshly ground pepper and grated parmesan. Bake for 20-25 minutes. Garnish the courgette parmesan with a flower and a spoon of stracchino and serve.
