Bianconanni in carrozza
Ingredients for 4 persons
Bianconanni – 400 g
00 Italian Flour – 100 g
Cold sparkling water – 200 ml
Egg yolk – 1
Anchovy fillets – 4
Sliced bread – 4 slices
Salt and peanut oil to taste
A cheese with a compact paste that brings out the flavour.
Method
Cut slices of bread in half, put on a piece of Bianconanni and fillet of anchovy, cover with the other half of bread, close it all up with a toothpick and place inside refrigerator. Heat oil and meanwhile prepare a tempura by mixing water, flour and egg yolk: the result should be a slightly thick batter that does not slip off the bread quickly. Dip filled bread in batter and fry it in hot oil; after frying dry on a clean paper towel and season with salt.
