Baked Aubergine Medallions with Stracchino
Ingredients for 4 persons
4 striped aubergines
1 package Nonno Nanni Stracchino with Probiotic Ferments
parsley to taste
salt to taste
pepper to taste
breadcrumbs for breading
extra virgin olive oil, as needed
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Method
Preheat the oven to 190°C.
Wash and dry the aubergines and cut into slices about 1 cm thick. Spread a little Nonno Nanni Stracchino on the aubergine slices, put another slice on top and turn in the breadcrumbs flavoured with fresh parsley. Arrange the aubergine medallions on a baking sheet lined with parchment paper, drizzle with a little oil and bake at 190°C for 25 minutes or until they are golden brown on top.
Serve hot or warm, also delicious the next day.
