Half Moon Ravioli with Nonno Nanni Stracchino

Ingredients for 4 persons

200 g fresh egg pasta sheets
150 g chicory and 150 g chard
200 g Nonno Nanni Stracchino
1 egg
salt to taste
butter
fresh sage
parmesan

Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour

Method

Clean and boil the vegetables for 5 minutes in salted water, drain and squeeze out the water; set aside. In a bowl, mix the stracchino with the chopped greens, parmesan, egg and salt. Combine the ingredients well until you have a homogeneous mixture. Roll out the rectangular egg pasta until very thin. Place teaspoons of filling on the pasta, spaced far enough apart to make half moon ravioli. Fold the sheet over the filling and use a pastry wheel to cut the pasta into half moon ravioli. Boil in plenty of salted water for 5 minutes. Serve the ravioli with melted butter, sage and grated parmesan.
