Piadina (flat bread) with Stracchino paté and wild boar sausage
Ingredients for 4 persons
4-5 juniper berries
A sprig of rosemary
150 grams of wild boar sausages
250 grams of soft Nonno Nanni Stracchino cheese
Vegetable based piadina (flat bread)
Nonno Nanni Stracchino is a fresh, soft cheese with a unique flavour
Method
Crush the juniper berries in a mortar and remove the rosemary leaves from the stems. Put them in a food processor, along with skinned sausage and stracchino cheese and blend into a paté. Spread the mixture on the piadina and roll or fold them in half and place in a 180° oven for 10 minutes, just enough time to sear the sausage.
