Stracchino, pancetta and artichoke quiche
1 roll of puff pastry
250 grams of soft Nonno Nanni Stracchino cheese
1 egg
50 g diced pancetta
5 or 6 boiled artichokes
2 slices of Emmental
Breadcrumbs to taste
Milk to taste
4 tablespoons of Parmigiano cheese

Method
Preheat oven to 190°. Unroll the pastry and arrange in a baking dish. In a bowl, mix the stracchino with an egg. Add the pancetta, artichokes cut into strips and parmesan cheese and mix well. Pour the mixture into the pastry shell. Complete with slices of Emmental cheese cut into strips and sprinkled with breadcrumbs. Folded edges, brush them with milk and bake for about 20 to 25 minutes at 180 °. The cake should be golden brown.
