Quail eggs, Squaquerello and mixed salad
12 quail eggs
125 g of Squaquerello Nonno Nanni
mixed salad to taste
ground black pepper to taste
pinch of salt
Nonno Nanni Squaquerello is a fresh, distinctly flavoured soft cheese.
Method
Boil the eggs in a saucepan with water and a few tablespoons of white vinegar for 5 minutes; allow to cool, shell gently being careful not to break them, place in a dish and leave to cool completely. Meanwhile, wash and dry the lettuce well. Halve the eggs, then place the yolks in a bowl: mix them with the Squaquerello and a pinch of salt and pepper, squashing well with a fork until obtaining a smooth cream. Fill the eggs with the Squaquerello Nonno Nanni, add a few leaves of lettuce and cover with another piece of stuffed egg. Continue until the filling is finished and serve.
